Appearance

Pale lemon with flashes of green, shimmering in the glass. The mousse is ultra-fine and energetic, forming a persistent, delicate bead that speaks to precision and careful élevage. This is a champagne with elegance.  

Aroma

Taut and focused from the outset. Citrus leads — lemon zest, lime peel and a hint of grapefruit — followed by crisp green apple and underripe pear. With air, subtle chalky minerality emerges, alongside delicate notes of white flowers and a faint biscuit edge from lees ageing. It’s clean, lifted and quietly complex. Any more characteristics and they would have to make the bottle bigger ! 

Palate

Razor-sharp yet beautifully composed. The absence of dosage allows the purity of fruit and structure to take centre stage — think green apple, citrus pith and a saline, almost oyster-shell character. The mousse is fine and driving, carrying a linear acidity that cuts cleanly through the palate. There’s a subtle creaminess from lees contact, but the overall impression is one of tension, precision and length. The finish is dry, mineral and mouth-wateringly persistent.

This is a gastronomic Champagne that thrives with precision-driven dishes and clean flavours:

  • Oysters, sashimi and raw seafood
  • Ceviche with citrus and herbs

  • Lightly cured salmon or trout
