Collection: Hattingley Valley

Tucked away in the rolling chalk hills of Hampshire, Hattingley Valley is one of the brightest stars in the constellation of English Sparkling Wine. Established in 2008 by Simon Robinson, this family-owned estate transformed a farm originally used for chickens and grain into a world-class viticultural powerhouse.
The journey began with the planting of the first vines in May 2008. Simon, inspired by the potential of the local Hampshire terroir—which bears a striking resemblance to the celebrated chalk soils of Champagne—assembled a crack team, including the legendary winemaker Emma Rice. Emma’s influence was seismic; under her guidance, Hattingley became known for its precision, its use of oak aging, and its pioneering spirit. Today, Head Winemaker Rob MacCulloch MW continues this legacy of excellence.
Located in Lower Wield, near Alresford, the winery itself is a masterpiece of eco-friendly design, housing state-of-the-art equipment that allows Hattingley to not only craft their own award-winning labels but also act as a custom crush facility for other aspiring English growers.
The Portfolio: Bubbles and Beyond
Hattingley’s calling card is its Classic Reserve. This NV (Non-Vintage) blend is a masterclass in balance, offering toasted brioche notes alongside a zesty green apple acidity. For those seeking something more opulent, the Kings Cuvée—a premium, oak-fermented blend—offers a rich, creamy texture that rivals top-tier prestige cuvées from across the Channel.
They also produce a stunning Rosé, brimming with strawberry and forest fruit character, and have recently ventured into the world of still wines with their Still White (Chardonnay) and Still Rosé, proving that Hampshire’s cool climate can handle more than just bubbles.

Food Pairings: The Grape Wizard’s Picks
  • Classic Reserve: This is the ultimate "Fish & Chips" wine. The high acidity cuts through the grease, while the yeastiness matches the golden batter perfectly.
  • Rosé Sparkling: Try this with Duck Hoisin. The red fruit profile of the wine loves the richness of the duck and the sweetness of the plum sauce.
  • Kings Cuvée: Go decadent. Pair this with Truffle Mac ‘n’ Cheese or butter-poached lobster. The oak-derived structure holds up beautifully to heavy, creamy textures.
