There’s a modernity to EPC that feels refreshing — single terroir, single variety, and a clear intent to let Chardonnay speak without disguise. This Blanc de Blancs Brut leans into generosity and drinkability, but never loses its Champagne precision. It’s vibrant, polished and quietly confident.

Appearance

Pale gold with glints of green at the rim, lifted by a fine, persistent mousse. Clean, bright and energetic — the bead is delicate rather than aggressive, hinting at finesse over power.

Aroma

Fresh and inviting, with orchard fruits leading the charge — crisp apple, ripe pear and white peach. Citrus notes weave through — lemon zest and a touch of orange — alongside subtle floral tones. With air, the wine opens into soft brioche, toasted pastry and a gentle hint of honey, adding depth without overshadowing the fruit.

Palate

Lively from the outset, with bright acidity driving the wine forward. Citrus and green apple bring freshness, while a rounded mid-palate — a hallmark of the Sézannais terroir — adds a softer, more generous texture. Fine bubbles carry notes of white fruit, light pastry and a delicate bitterness that adds structure and length. The finish is clean, balanced and quietly persistent, walking the line between freshness and subtle richness.

Food Pairing

This is a Champagne built not just for celebration, but for the table — versatile, food-friendly and quietly complex:

  • Shellfish — oysters, crab, langoustines
  • Risotto with wild mushrooms and Comté
  • Roast chicken or veal with a light cream sauce
  • Thai coconut chicken or lightly spiced dishes
  • Grilled white fish with lemon butter
  • Soft cheeses such as Brie or fresh goat’s cheese

Serve well chilled, but not ice-cold — this is a Blanc de Blancs that rewards a little patience in the glass. It’s not about sharp austerity; it’s about balance, texture and the kind of understated elegance that keeps you reaching for another pour.

I shouldnt say this but a 'piggy pour' is surely needed
