Aroma
The nose is a real treat—think apple strudel, baked pastry, and lemon rind. Because of the winemaking style and 20 months on the lees, you get wonderful notes of sultana and cinnamon. Wild floral notes and a touch of minerality. It’s complex, alluring, and definitely invites you in for a second sniff.
Palate
On the palate, this is a "grown-up" sparkling wine. It’s bone dry (Extra Brut) with a precise 1.5 g/l dosage that keeps it linear and focused. The Pinot Gris (37% of the blend) adds a serious boost of depth and structure. Expect a soft, creamy texture with flavors of toasted spice, red apple, and bruised peach even almond. The acidity is keen and vibrant, leading to a long, savory finish that just keeps going
This vintage is an evolution. It’s a bit drier and "hipper" than the 2020, moving away from simple fruit into something more textural and food-friendly. With only 7,200 bottles made, it’s a small-batch gem that proves Devon is the "cool kid" of English wine right now - taking on essex !
