NV Champagne Drappier Clarevallis Organic Extra Brut France
GW says: Champagne Clarevallis (the name given by Saint Bernard to the abbey he founded) is made with grapes from the Urville hillsides planted during the Cistercian period, now organically farmed and ploughed by horses. Clarevallis is the expression landscape and the land that humankind has been tending here since the 12th century.
Grapes: 75% Pinot Noir, 10% Pinot Meunier, 10% Chardonnay, 5% Blanc Vrai
Appearance: A golden yellow, very fine, persistent bubbles
Aroma: Hints of acacia honey, beeswax and marizpan, given time in the glass quince jelly combines with raspberry jam and warm brioche.
Palate: Creamy textured, strawberry notes on the finish subtlely combine with ripe blood orange.
